Once upon a time people made wine from honey. That was the only way humans knew how to make alcohol for 800 to 1000 years.
Early vintners learned to use local fruit and spices to add flavor and complexity to their honeywine. They also used the juice of ripe grapes to add sugars, flavors and to make their precious honey go further. Humans eventually figured out how to create Barleywine (Beer) by soaking grains in hot water.
Each iteration brought this magical potion to a wider audience.
Our wines are made from local Skagit Valley honey and whole fruit (Blackberries, Raspberries, Black Currants).
Our wines typically drink like a fruit-forward burgundy with a balance more like a well-aged port wine.
Because the fermentable sugars come primarily from honey, our wines never go bad - even once they're open.
Does that make our wine better? No, just different.
